Chocolate Pudding - Tuesdays with Dorie



Melissa of Its Melissa's Kitchen has chosen "Chocolate Pudding" for us this week. A lovely choice for hot summer kitchens - there's no need to turn the oven on, only some whisking at the stove top. Just click on Melissa's blog link for the recipe.

The texture of the pud is smooth and the chocolate nice and rich. I think it's a bit soft though, like soft as in sauce. I followed the recipe instructions exactly but I am wondering if the problem occurred with whisking the sauce in the pan to thicken - it took me the longest time to get it to thicken and I read today that briskly beating a sauce when you have cornflour as a setting agent can cause it to break down and become runny. I have never had problems with making custard before when it's just stirred in gently. I think I'll try out a couple of other chocolate pud recipes to see if they are thicker. But it did taste good - my dish pictured above is all gone now!

the pudding kind of grew on me...it is better today than yesterday. too bad youwon't get to find out since yours is all gone!! looks cute with the cherries...

Mine actually thickened more quickly than the recipe said it would. If you try it again with a heat-proof rubber spatula rather than a whisk, you'll probably have better luck. But thick or thin, this stuff is amazing.

I was actually thinking the flavor would be perfect for hot fudge sauce.

Mine didn't really thicken either. That didn't stop us from eating it, mind you.

Love the cherries on top! Maybe you just needed to turn the heat up a tiny bit more. Mine thickened too quickly!

Great addition with the cherries! I didn't have a problem with my setting. I wonder if different climates have anything to do with the results of this pudding. Hmm. I really liked your photos and look forwardto reading your post next week!

That is so weird that your pudding didnt set. did you let it cool for the recommended amount of time? Well even if it was runny it still looks great!

Your pudding looks good, but sounds like you weren't happy w/the texture, being too thin.

Here's a little hint, when using the cornflour your mixture must come to almost a boil.. Not that you want to boil it no, but just see some bubbles coming up.. & you must stir well. It's just the nature of cornflour allowing it to thicken as it should.

The cherries are perfect topper for the pudding. Even though it didn't set, the pudding looks good to me.

I've not tried Dorie's, here's my favorite chocolate pudding recipe, from MS. I also use this same recipe for making choco cream pie by adding an additional tbs. of cornflour.

Cherries sound like a great topping for chocolate pudding. Nice idea.
